For caramelized sugar, put the sugar in a saucepan and melt at high temperature – stirring constantly. After about 2 minutes, the sugar is caramelized and has a golden brown to light brown color. Do not let the sugar get too dark or it will taste bitter.

You can add 125 ml of water to the caramelized sugar and continue simmering to make caramel syrup. Be careful when pouring the water – hot steam will rise!

For a delicious caramel sauce, add 50 g butter to the caramelized sugar and let it foam slightly. Pour in 250 ml of cream and boil down while stirring until creamy.
