For the beef and green bean stew, place the beef in a pot and bring to a boil, covered with water.
Wash the greens. clean, cut into small cubes and add to the soup.
Wash the runner beans. clean them and pull off the threads on the sides. Cut the green beans into pieces about 3 cm long.
Peel and wash the potatoes and cut them into cubes.
When the beef is tender, remove from the soup and cut into cubes.
Cook the green beans and potatoes in the hot soup until soft.
Wash and finely chop the parsley.
Add the meat pieces back in and stir in the crème fraiche. Season to taste with salt and pepper.
Serve the beef and green bean stew sprinkled with parsley.
