For the Aromatic Cabbage Tofu Bag, place the cabbage leaves in the perforated steamer insert and cook at 90 °C for 1 minute. Briefly rinse cabbage leaves in ice-cold water and drain. Rinse the tofu in cold water, pat dry and mash finely with a fork.
Mix tofu with egg whites, garlic, green onions, parsley, peanuts, ginger, lemon zest and nutmeg to a firm mixture. Season the tofu mixture with nutmeg, salt and chili and press down with a fork. Form 12 balls of about 3 cm in diameter. Place one tofu ball in the center of each cabbage leaf. Fold the cabbage leaf over the ball and pin together crosswise with toothpicks.
Place cabbage packets close together in perforated steamer basket. Cook in the steamer at 100°C for 12 minutes and serve the Aromatic Cabbage-Tofu Sachet immediately.
