For the apricot towers, first crumble the cookies and divide the crumbs among 6 large tumblers.

Mix yogurt with sugar and apricot puree. Whip the cream. Mix the gelatine with the 12 tablespoons of apricot juice and heat. Stir the gelatine juice into the yoghurt and fold in the whipped cream.

Spread the blueberries on the cookies and pour the yogurt mixture on top, close the glasses and refrigerate for at least 3 hours.

To serve, loosen the mixture slightly from the rim of the glass and turn out onto plates. Skin the remaining apricots and puree half of them, decorate and serve the apricot towers.
