For the apple strudel with walnuts, knead a strudel dough from flour, egg yolk, oil, vinegar and lukewarm water. Brush the dough with warm butter and let it rest covered for about 1 hour.

For the apple filling, peel the apples and cut into cubes. Toast the breadcrumbs. Divide the dough into 2 parts. Roll out the dough on a floured strudel cloth as large as possible and pull up on floured back of hand. The dough should be thin.

Cut away the edges. Spread bread crumbs on the rolled out dough, as well as apples, sugar, cinnamon, raisins and walnuts. Roll up the strudel and place it on a baking sheet lined with baking paper, seam side down. Do the same with the second half of the dough.

Brush the apple strudel with walnuts with melted butter and bake at 190°C for about 45 minutes.
