Instructions:

For the apple strudel cookies, finely grind the apple chips with a food processor.

Cream the butter with vanilla sugar and sugar and beat in the egg yolks one by one. Then preknead the flour, oatmeal mixed with the starch and cinnamon using a food processor or hand mixer with dough hook and then knead by hand into a compact dough.

Wrap dough in plastic wrap and refrigerate for half an hour.

Roll out the dough on a floured work surface to a thickness of about 3 mm and cut out cookies with bell molds.

Preheat the oven to 180 °C top/bottom heat.

Brush the bells with egg white.

Bake the apple strudel cookies for about 15 minutes and then let them cool.

Mix water, powdered sugar and cinnamon to a homogeneous glaze and brush the bells with it. Allow the glaze to dry and then decorate with golden sprinkles as desired.
