For the apple pie, first prepare a shortcrust pastry from the ingredients and let it rest for an hour.
In the meantime, peel, quarter and slice the apples. Marinate with lemon juice, vanilla sugar and cinnamon.
Roll out half of the dough thinly and place on a baking tray lined with baking paper. Sprinkle with sponge cake crumbs and place the marinated apples on top.
Roll out the second half of the dough and cover the apples with it, brush with beaten egg and sprinkle with flaked almonds. Bake the apple pie at 170 °C for about 45 minutes.
