A simple but delicious cake recipe:
(*) Makes 7 to 8 pcs (ring molds are needed!) Cut the apples unpeeled into slices about 1 cm thick. Put them in a wide frying pan with sugar, juice of one lemon and Calvados and steam them for a short time on a low fire with the lid closed, the apples should still have bite. Remove from the syrup and cool. Put the syrup aside for the yeast dough.
Put the flour in a suitable bowl and make a bulge in the center. Stir through the milk and yeast and form into the flour hollow. Stir through with a little flour and dust lightly. Let rise for fifteen to twenty minutes.
Let the butter melt. Add lemon zest, sugar, salt, calvados syrup and eggs and mix. Add to the flour form and mix to a smooth, very thick dough. Place in a warm place with the lid closed and let rise until double in size.
Butter ring mold well and dust with flour. Fill with dough to 1 cm below the rim. Rise the dough repeatedly for fifteen minutes.
Bake the babas in the oven heated to 180 °C on the lowest rack for about thirty minutes. Turn out of the pan and cool on a cooling rack.
For the syrup, bring water and sugar to a boil and perfume with Calvados. Soak the babas well with the syrup. Be careful not to break them apart when wet.
To serve, place the apple slices on a plate, place 1 baba on each and top with whipped cream or apple ice cream, if desired.
