For the curd cheese and pear slices, whisk the yolks, sugar and vanilla sugar until foamy. Add oil and water. Then fold in flour and baking powder.
Finally, fold in the stiffly beaten snow. Bake at 180 °C. Whip the cream with the cream stiffener according to the instructions and mix the vanilla sugar, sugar, curd and yolks in a separate bowl.
Carefully mix with the whipped cream. Finally, fold in the sliced pears.
Warm the jam and rum a little and spread on the cake, then spread the cream and curd mixture on top.
