Toasted Bread with Herb Mushroom & Salad

For the roasted bread with herbed mushroom & lettuce, peel the tomato, then remove the core and cut into small cubes.

If possible, also skin the chilli and cut into even smaller cubes, then finely dice the shallot and garlic.

Cut herb mushrooms into thicker slices, usually these mushrooms do not need to be cleaned.

Wash and coarsely chop the flat-leaf parsley, finely chop one half of the persil and melt the second half in butter in a non-stick pan and sweat together with the onions until they become translucent. Add the chilli and garlic and sauté briefly as well.

Then add the mushrooms, sauté everything briefly and then let it cook vigorously. Lower the temperature, then add the diced tomatoes.

Season with salt and pepper and add the finely chopped parsley.

Then toast the bread, spread with butter if you like and finally arrange:

Cover the bread with ham and spread the mushroom ragout on top.

Finally, add 1 teaspoon of crème fraîche and sprinkle with the coarse parsley, if you like, shave a little Parmesan on top and the delicious toasted bread with herb mushroom & salad is ready.
