For the pumpkin seed macaroons, mix the sugar with vanilla sugar. Beat the egg whites until stiff, gradually adding the sugar.

Carefully mix in the grated pumpkin seeds and place small heaps of the mixture on a baking tray lined with baking paper or baking foil.

Bake in the preheated oven at 160 °C (convection oven) until the macaroons have taken on some color.
