For the lemon beetle bean salad with tofu, first soak the beetle beans overnight and then boil until soft.

Cut the smoked tofu into cubes. Sort and wash the wild garlic. Cut into strips.

Wash lemon and cut into small pieces. Break or grind feta cheese into bite-sized pieces.

Mix cooked beans, tofu, wild garlic, feta cheese and lemon pieces and flavor the salad with olive oil, basil leaves, salt and pepper.
