A bean recipe for every taste:
Ingredients for 4-6 people.
You can cook this soup well in advance with the first six ingredients (including the bean seeds). But if at the beginning the fresh vegetables, the kitchen herbs as well as the macaroni have been added, it should not be reheated.
In a large heavy bottomed saucepan, saute the onion and garlic in the oil for 3-4 min until soft.
Add the vegetable soup and the thoroughly drained bean seeds, bring to a boil and bubble for 20 min. Reduce the temperature and simmer on low heat for 20 min with the lid closed. Later add the zucchini, bean pods and tomatoes, stir in the paradeis pulp and simmer on low heat for another 20 min.
Season vigorously with salt and season with pepper. Add the basil, 2 tablespoons of the parsley and the macaroni and simmer on low heat for another 15 minutes.
Sprinkle with the remaining parsley and serve very hot.
