Crème Fraîche Wafers

For the crème fraîche wafers, separate the eggs. Beat the egg whites until stiff. Mix the yolks with the crème fraîche, salt and sugar. Sift the flour with the baking powder and stir into the yolk mixture. Carefully fold in the snow. Bake the crème fraîche waffles in batches in a hot waffle iron.

Date Spread
