For the red wine plum cinnamon jam, wash and pit the plums and cut into small pieces. Place diced plums in a large saucepan and heat to full.

Add vanilla sugar and preserving sugar and bring to a boil. Cook, stirring constantly, until sugar liquefies and mixes with plums (puree if desired).

Simmer over medium heat until desired thickness is reached (about 30-45 minutes). Over low heat, stir in cinnamon and red wine.

Remove pot from heat and pour hot jam into sterile jam jars. Turn jam jars upside down for about 10 minutes and let red wine-plum-cinnamon jam cool.
