For the potatoes with Parmesan grappa filling, steam the potatoes, peel and scoop out with a small spoon, leaving only a rim of about 1/2 cm.
Mash the inside of the potatoes with a fork and mix with Parmesan cheese, grappa, butter, herbs and a little salt.
Fill the potatoes with the mixture, place on a baking tray and bake on the top rack until golden brown.
