Mix flour and yeast or flour and eggs with water to make a dough and let it rest a little. Grate raw potatoes, onion and carrot, mix into the dough and season with salt. Rub a bacon rind on a cooking iron or a pan and bake the dough into a hand-sized ravioli. They should be golden brown on both sides.
Serve with a fat sauce of finely chopped onions sautéed in sufficient oil until translucent. Add sour cream or crème fraiche, stir and bring to the boil.
