Bring the salt, milk, sugar and the vanilla pod, halved lengthwise, to the boil. Sprinkle in long-grain rice while stirring, swell for approx. 45 min. Remove vanilla pod. For the compote, drain the plums. Stir plum juice with cornstarch until smooth. Bring to a boil while stirring. Heat the plums in it. Season to taste. Serve with rice pudding. Serve with sugar and cinnamon.
