Prepare the gnocchi dough as described in the basic recipe, let it rest and shape it into gnocchi. Then briefly scald the tomatoes, remove the skins, seeds and cut into small cubes. Heat the oil in a frying pan, add the finely chopped garlic and the cut anchovies. Sauté briefly and add the diced tomatoes. Season with salt and pepper. Meanwhile, in a large saucepan, bring salted water to a boil, add gnocchi, let rise and steep for 2-3 minutes, then lift out with slotted spoon and add to tomatoes. Arrange on warmed plates. Cut mozzarella into cubes, sprinkle on top and serve gnocchi with mozzarella and anchovies.
