Instructions:

For the fish in batter, first beat the egg whites until stiff. Prepare the batter with flour, oil, egg yolks, salt and beer. Then fold in the egg white and let it rest for about half an hour.

In the meantime, marinate the fish pieces in a mixture of lemon, parsley and finely chopped onion. (Too strong a lemon flavor is not to everyone’s taste!).

Season fish pieces with salt, pull through the batter and bake – preferably in the deep fryer. The fish in baking fish must swim in the fat.
