For vegetable cevapcici boil the potatoes for about 30 minutes, then peel and press through a potato ricer. Wash the vegetables, divide the cauliflower and broccoli into small florets and steam for a few minutes.

Finely grate the carrots and cut the leeks into very thin strips. Then mix the potato mixture with the chopped vegetables, add the flour and eggs, season with salt, pepper and possibly with herbs and mix well.

Form elongated vegetable cevapcici from the mixture and fry in hot fat for approx. 5 – 7 minutes until crispy.
