For the vegetable casserole, wash the vegetables, peel the carrots and zucchini and cut everything into fine strips or pieces. Brush a baking dish with olive oil and mix the vegetables in it.
Clean the herb mushrooms and cut them into slices about 5 mm thick, spread them on the vegetables. Mix well vegetable soup and Soya Cuisine, season with herbs as desired, salt, pepper and some paprika powder and pour over the mushroom-vegetable mixture.
Sprinkle with some paprika powder and bake covered with aluminum foil at 190 °C for about 40 minutes. Remove the aluminum foil 10 minutes before the end of the cooking time.
