For the trout In spelt beer, boil the fish stock with spelt beer and reduce a little. Put the trout in a buttered mold. Season with salt and pepper.
Heat the oven to 180 degrees and roast the trout with the beer and fish reduction poured over it for about 15 minutes.
Add herbs, whipped cream and spices 2 minutes before the end of cooking.
Serve the trout in spelt beer.
