Cook a shortcrust pastry with egg, flour, butter flakes and salt. Let the dough rest in the refrigerator for an hour.

Mix half of the Roquefort with crème fraîche, whipped cream and calvados. Roll out the dough and place it in the greased rectangular tart pan. Prick the bottom with a fork, then spread with the cheese mixture and sprinkle with the remaining cheese cubes.

Bake at 200 °C in a heated oven on the lower rack for twenty minutes.

Cool slightly and serve with, for example, strong red wine, apples, grapes and nuts.
