Prepare strudel sheets according to package instructions. Preheat oven to 180° C. Rinse rice in a sieve under running water. Cook rice in milk together with sugar, vanilla sugar, cinnamon stick and lemon zest until soft. Let cool slightly and mix with raisins, lemon juice and butter. Brush strudel dough sheets with melted butter or margarine and cut into 3 equal parts at the folds. Place filling on bottom part of dough strip and roll up dough. Place rice rolls, seam side down, on a baking sheet lined with parchment paper. Brush with melted butter or margarine. Bake in oven on middle rack for approx. 12 min.
