For the sweet apple soup with Manner slice dumplings, boil the wine, sugar and lemon juice together. Peel and core the apples and cut them into small pieces. Add to the wine and simmer for about 10 minutes, stirring frequently. Then puree finely with a hand blender and refrigerate.
For the dumplings, grind the biscuits into fine crumbs.
Finely blend the Manner wafers and the nougat in a food processor, form 4-8 small dumplings from the mixture, roll in the crumbs and place in the freezer for about 40 minutes.
Serve the soup in precooled plates, put the dumplings inside and garnish with some fresh mint.
