For the spelt pancake, soak raisins in rum or juice. Beat egg whites with salt until very stiff. Mix egg yolk, milk and spelt flour, let swell. Fold the beaten egg whites into the dough mixture.

Melt clarified butter in a pan. Empty batter into hot fat, after 2 minutes (batter is still liquid on top) carefully quarter batter and turn each quarter separately.

Let fry and tear with two forks. Keep on frying.

Add the raisins to the spelt pancake.
