For rolled veal roast, first salt rolled veal roast.

Place the finely chopped bones in a roasting pan, pour water over them and place the roast veal on top. Pour a little oil and roast in the oven at about 190 °C for about 90 minutes, turning once and basting several times.

After about 70 minutes of roasting, add the small shallots with peel and thyme.

Remove the roast and the shallots.

Strain the natural juice through a sieve, season with salt and pepper and bind lightly with cold butter.

Rolled veal roast can be served with the juice.
