Wash the tomatoes and then cut them into pieces, from the washed rocket put a few beautiful leaves aside, the rest you chop coarsely. Cut the feta cheese into coarse cubes and the shallot into fine cubes.
Now mix mustard, olive oil, balsamic vinegar, sugar, salt, pepper and the shallot cubes to a salad dressing and marinate the rocket leaves briefly in it.
Spread the marinated rocket leaves evenly on the plate in a star shape and place the diced tomatoes and chopped rocket on top. Pour the salad dressing over the lettuce and place the cheese cubes on top.
It goes well with baguette.
