For the herb cheese with roasted potatoes, boil the potatoes for 15 minutes. Remove the cheese from the casing and cut into quarters. Mix vinegar, mustard, salt, pepper, herbs and 1/2 tsp oil together.
Pour over cheese. Peel the potatoes. Fry in remaining oil and season. Clean and chop spring onions and sauté briefly with potatoes.
Serve the herb cheese with roasted potatoes and with some paprika.
