For the red wine pears with vanilla cream, peel, core and cut the pears into eighths. Bring the red wine to the boil with the spices and sugar, put the pears in and stew them over a low heat until not too soft, turn them over and over in the red wine, let them cool down.
Boil the milk with the vanilla sugar. Beat the yolks with the sugar in a bowl until creamy, mixing in the flour. Stir the boiling milk into the yolk cream.
Pour everything back into the pot, bring to a simmer and let it bubble up once while whisking constantly. Pass the vanilla cream through a sieve, let it cool, sprinkling the surface thinly with sugar to prevent a skin from forming.
Divide the vanilla cream among dessert bowls and place the pears on top.
