Heat sugar, red wine and ginger in a saucepan. Remove the skin from the pears, cut them in half, stone them and put them in wine broth on the spot so that they do not turn brown. Sauté pears with lid on for 3-5 minutes, meanwhile turn them to the other side.
Let pears cool in wine broth, ditto now occasionally turn to the other side, so that the pears take on the red wine color evenly.
Whip the cream until stiff. Crush the cheese, mix with the fresh cream and fold into the whipped cream.
Season cheese cream with cayenne pepper. Serve pears with cheese cream and wine broth.
Our tip: Use sweet red wine for a sweet note and rather dry wine for flavorful, spicy dishes.
