In a bowl, mix yeast with lukewarm milk, mix briefly and add eggs. Season with salt and freshly ground pepper, slowly incorporate flour and room-warm butter while kneading constantly. Knead until a smooth dough is formed. Cover and let rise in a warm place until doubled in volume. Preheat the oven to 190 °C. Beat the dough again and add the grated cheese. Butter a loaf pan well, roll out the dough to size and put it in. Cover again and let rise. Brush the surface with egg and sprinkle with a little cheese and bake for 30 to 40 minutes until golden. Allow ready-baked Räßkäsbrot to cool and cut open like a bread roll.
