For the potato pancake, mix the mashed potatoes well with the eggs and add a little salt. In a large frying pan, heat oil until very hot. Pour puree mixture on the hot oil, smooth and immediately reduce heat to 1/3.
After about 3-4 minutes, when it smells good, use a plate or pan lid to turn the patty and brown the other side. After 3 minutes, tear the patty with two forks (like Kaiserschmarren) and serve as a side dish or with salad as a main course.
