A delicious mushroom dish for any occasion!

Soften the potatoes for 10 minutes, drain and mash to a pulp.

Melt the butter, fry the mushrooms and garlic for 5 minutes, remove and drain.

Mix the mushrooms and the garlic together with the beaten egg and the chives into the potato mixture.

Divide the mixture into 4 equal portions and shape into round cookies.

Turn them in the flour on the other side until the outside is completely covered.

Heat the oil and bake the cookies on medium heat for 10 minutes until golden brown. After the first 5 minutes, turn the cookies once on the other side. Serve hot. Serve with a crisp green salad.

Tip: You can cook the cakes in advance and keep them in the fridge for up to 24 hours.

If you do not like chives, use other fresh tarragon, sage, kitchen herbs and cilantro all go well with mixed mushrooms.
