Scale pike, rinse well, rub dry with household paper, rub with salt inside and out. Place fish with a cup in the belly upright, in floating position, in the fat pan or a large roaster. Evenly distribute cleaned mushrooms around fish, pour water and wine, place butter flakes on top. Cover the pan with aluminum foil or close the roaster. Cook in the oven until done.

Knead flour and butter together. Remove pike from heat, arrange on a heated plate, keep warm. Pour fish stock into a saucepan, mix in flour butter, make in about 5 min. Refine sauce with whipped cream, white wine and pepper. Pour some sauce over the pike, bring the rest to the table separately.

Serve: Parsley potatoes or long grain rice.
