For the pear caramel spread, heat oil in a pan, add sugar and let caramelize while stirring constantly. Empty onto baking paper and let cool. When cool, chop into small pieces.
Place pear pieces in a large saucepan and bring to a boil with the water. Stir in the preserving sugar and cook, stirring constantly, for about 5 minutes. Stir in the caramel, fill the pear-caramel spread into jars while still hot and seal well.
