For the peppers in oil, first quarter the peppers and remove the seeds as well as the white fruit casing.

Either on the grill (would be perfect for barbecue flavors) or with a grill pan, briefly grill the bell pepper quarters in batches on both sides over very high heat until they are soft.

Mix the oil with the peeled and lightly pressed garlic cloves and the herbs.

Now layer the peppers into the prepared jars and top with the oil mixture.

For a longer shelf life it is possible to boil down, a good oil can withstand this temperature without significant loss of flavor or quality!

Boil down the peppers in oil at 75 °C for 25 minutes
