Beef gets slightly tough and bland in the microwave. But as mince, lightened by bread and spinach, it stays juicy. Feta cheese, garlic and thyme provide the necessary seasoning. Due to the low-fat preparation, the minced meat also tastes good when cooled.

Soak the toast in hot water. Clean, select and rinse the spinach, place it dripping wet in a microwave dish, season lightly with salt and collapse at 800 watts for 2 to 3 minutes with the lid closed. Squeeze the bread as well as the spinach, chop the spinach. Peel and finely chop the garlic clove, knead together with thyme, salt and pepper, the egg, the meat as well as the spinach-bread mixture in a baking bowl to form a spicy dough. Then chop the cheese into small cubes and mix it into the meat dough. Form an oblong minced roast, roll in the sesame seeds and place in a microwave dish. Add the juice of one lemon and cook with the lid closed at 800 watts for 20 minutes. Pull 5 min, then to table form. Serve with tomato salad and baguette.

For picnics, cook the roast on the spot in a ceramic casserole dish. After cooking, pour off the juices from the roast! Then cover the give with aluminum foil.

Tip: Did you know that one bowl of spinach already covers the entire daily requirement of vitamin K and beta-carotene?
