Liter Remove the peel from the ginger and onion, cut both into very fine strips. Clean chili, score lengthwise, remove seeds, rinse and chop very finely. Turmeric free from the skin and finely cut into cubes (Attention! Turmeric stains strongly – best to wear disposable gloves) Pumpkin rinse, cut into narrow wedges and remove the seeds.

Cut pumpkin slices diagonally in half. Peel and rinse potatoes, cut into pieces. Heat oil in a wok or large frying pan. Fry mustard and cruciferous seeds in it. Fry onion briefly.

Fry the pumpkin for 5 minutes, turning. Add ginger, turmeric and chili and sauté briefly. Add coconut milk and 100 ml water. Add potatoes, bring to boil and simmer for 20 min.

Peel the mango and cut the flesh from the stone and into sticks. Add to the curry form and cook for another 3-4 minutes. Season with salt and serve.

Serve with basmati rice.
