Rinse and dry the legs of kid and season with salt and pepper. Heat 3 tbsp. olive oil in a frying pan and brown the legs all over. Preheat the oven to 150 degrees.

Remove the skin from the carrots and shallots. Cut the carrots diagonally into slices, halve the shallots lengthwise. In a roasting pan, caramelize the powdered sugar until light. Add the prepared vegetables with the remaining oil and sauté until translucent. 3.
