For the leftover dumplings, briefly sauté the onion and garlic in fat. Add diced ham or smoked meat and season with salt, pepper and parsley.
Season with marjoram and remove from heat. Add milk and eggs, mix and pour over bread or pastry. Dust with flour and mix well. Let stand for about 20 minutes, mix well again and form dumplings with wet hands and place in boiling salted water. Bring to a boil and then simmer on low heat for 20 minutes. Serve the leftover dumplings with salad, sauerkraut or roasted with egg.
