Beat the egg yolks, whole egg and sugar with a whisk until creamy. Add wine, juice of one lemon and grated lemon zest. Beat at moderate temperature until thick (do not make!). Beat egg whites until stiff peaks form. Mix the hot sauce into the snow.
Fill a bowl alternately with cookies (or leftover pastry) and sugared or sterilized fruit. Soak each cookie with sherry. Cover with hot wine mousse and leave to cool. Garnish with whipped cream before serving.
The dish can be cooked without fruit, the cookies can be generously soaked with rum or sherry and topped with whipped cream.
