A delicious mushroom dish for any occasion!
Mix well the rotten venison with soaked, well crushed bread, eggs, breadcrumbs and ground spices. If you don’t have a mortar, grind the spices in the following way: The spices in a plastic bag form and with a hammer or the back of a knife small break up. This prevents the spices from slipping away. A mortar is and remains of course unsurpassed.
Roast the formed meat loaves in a butter/olive oil mixture, constantly turning to the other side and baste with the roasting juices. Minimum roasting time 10 min – feel free to test the meat loaves by cutting them briefly. They should be juicy and not cooked through. For the vegetables, cook kohlrabi and carrots in salted water, drain, then continue to braise in whipping cream – season with salt and nutmeg. Clean the mushrooms and cut them into slices. Roast in a mixture of butter and olive oil. Season with salt and pepper.
Put the vegetables on a plate. Put the meat loaf on top, add the fried mushrooms, a little fresh herbs – red wine and you’re done.
