Cut the matie fillets lengthwise into strips. Peel onions and cut into slices. Rinse apples, quarter, remove core and cut into slices half a centimeter thick.

Spread butter on pumpernickel and cover with apple and onion slices and rolled-up matje. Pin everything with a wooden skewer. Drizzle the rolls with sour cream or crème fraiche and garnish with a little dill.

Tip:

Inexpensive, hearty. Fresh matie will keep for 48 hours in the refrigerator. Don’t cook snack until the morning of the party so apples don’t brown (be sure to mix with lemon).
