Instructions:

For the coconut milk rice with mummy apple compote, first peel and chop the apples for the compote.

Simmer all ingredients except the butter in a pot for about 30 minutes. Mash the soft fruit and remove the vanilla bean. Then stir in the butter.

Meanwhile, for the rice pudding, pop the rice in boiling water for 5 minutes. Pour off the water. Cook all ingredients over low heat, stirring constantly, until tender, about 15 minutes.
