Pour hot milk over brioches, cool. Prepare into a porridge by hand or with a fork. Add the eggs, sugar, cinnamon and vanilla sugar, mix well and add the pitted plums and the raisins. Dust a buttered gratin dish with a little bit of quinoa flour. Pour the dough into the pan, sprinkle it with breadcrumbs and spread butter flakes over it. Put the dish in the oven heated to 200 degrees for 1 hour. Use a knitting needle or a kitchen knife to check if the casserole is cooked. If the needle remains dry after piercing, the beggar is ready. It is eaten either warm or cooled. Grandmother used to serve it with soup.
