Cut one half of the cheese into cubes and finely grate the other. Boil water and butter and season with salt. Remove the saucepan from the stove and add the flour in one go and stir. Place saucepan on stove top one more time and stir dough until it separates.
Remove saucepan from the kitchen stove one more time and gradually fold in eggs one at a time. Fold in the grated cheese first, then the cubed cheese.
Place small heaps on a baking sheet with parchment paper as a wreath. Preheat the oven to 200 degrees – 220 degrees and bake the wreath for 20 to 25 minutes. Just before the end of the baking time, brush with egg yolk and sprinkle with a little bit of Emmentaler.
It goes well with wine and green salad.
