For the cheese cookies, mix butter, spelt flour, cheese, 1 pinch of salt and whipped cream to a smooth dough. On a floured surface, form into a roll about 3 cm in diameter and let it rest, covered, in the refrigerator for about 1 hour.

Then cut the roll into slices of about 35 equal thickness and place on a greased baking sheet.

Mix the water and egg yolk and brush the rolls with the mixture. Sprinkle with sesame seeds, caraway seeds or poppy seeds to taste and bake in a preheated oven at 180 °C for about 18 minutes.
