Chop the cold butter into coarse pieces, put it with the flour, 1 egg yolk, paprika as well as the cheese into the kitchen machine and quickly chop it. Tip the mixture onto a baking board and divide into three parts. Add caraway seeds, poppy seeds and sesame seeds respectively. Knead the parts separately with cold hands very quickly into a ball (do not knead too much, rather press them together. Refrigerate the doughs for at least 1/2 hour.
Roll out the doughs one by one and cut out cookies (pigs, lucky clover, mushrooms or small round crackers) – this is best done between firm foil or, for example, in a large cut open freezer bag. Leave the other doughs in the refrigerator in the meantime.
Place the cookies on a baking tray lined with parchment paper and brush a little with beaten egg yolk and sprinkle very lightly with cayenne pepper. Bake the cookies for 10-12 minutes on gas mark 3 until the edges turn golden.
